From the Urdnot Fortack's Joy of Cooking 2185 edition

Asari - Squishy but quite tasty, but the blue pigment tends to accumulate in your gut. The skin should be removed to avoid a nasty blue surprise when nature calls.

Turians - Poisonous to us. Have a sweet taste as many dextro-amino acids can cross activate 'sweet' taste buds. Sweet taste attracts children. If your children ingest please contact poison control.

Salarians - Tend to get stringy with age. Would recommend younger ones. Females are a rare delicacy and eating them is rumored to boost fertility.

Hanar - Tend to contain urea. To prepare, soak for a day in fresh water changing the water every 6 hours.

Krogan - Pre genophage we tended to eat our weaker clutch mates, we do not speak of this in modern times.

Vorcha - Vermin, must be skinned and cleaned.

Humans - Like pork, tends to taste gamey if slaughtered when the prey is in the midst of an adrenal response. Surprise in slaughter necessary to ensure quality product.

I recall reading the annotated Through the Looking-Glass. There's a scene where Alice talks about a looking-glass world and how the milk would be bad to drink. The footnote said that if the amino acids in milk were 'flipped' a if in a mirror, the result would be poisonous.

Assuming that turians and quarians are sufficiently mammalian to produce milk, it would kill you to drink it.

Take the d-amino acids are poisonous thing with a grain of salt, or at least the way Bioware tells you.

If they're a different race from you, it's not cannibalism.

That said, it might happen with any of the alien races as cultures can be so malleable. I recall in Deep Space Nine, when we learned that the Ferengi cremated their dead, and if a person was important enough then parts of the ash would be sold as collectables. It’s strange, but makes a certain sort of sense.
