Otherwise, I'll have to think about it.

I think my choice would be X3:Terran Conflict. X3:TC is cool because it has a lot of different aspects to it. There is so much you can do in that game (from trading to fighting fleets of space ships). Initially I've spend about 100 hours or so in the game before I did my first mission. Hehe. I've also wanted to play it a second time. I never did. I just keep my first game alive. Hehe. I've clocked hundreds of hours now. Great community, BTW. Everyone has one mindset. They want the game to improve. Great devs which encourage that. Their latest patch is 2.6. I have the beta installed I think. Patches include bug fixes, balance issues and new content. It also removes DRM. Nice gesture to their fans. The official patches also include the best community mods. Of course with the permission of the authors. These mods are tested and have become an official part of the game. Some of the devs are ex-community modders that now work full time for the company. Very cool.
What I like about their community is that you can post about an aspect of the game you don't like. And like on these forums it doesn't change much. But you can sign up to become a beta tester. In that case you can report bugs and submit feature requests. They have strict rules for that, so no giant threads like here. Bugs will certainly be fixed. Some take a long time, some are easy to do. Features either make it or get rejected. You can even go one step further and become a special tester who also gets access to very early stuff. I am not into that. The regular testing stuff is enough for me.
That's why I probably don't understand the BW community. I feel that this community is destructive by defending the devs. The community can't really do much other than voicing their opinion. If that opinion is censored by that community then all is lost. Hehe. In the X3:TC community the devs are loved because they actually listen to that community and do something with it. Bugs get fixed and new features are added. No large spreadsheets and company meetings. Just make it work.

Deus Ex
What i wouldnt give for a graphical updated version of that game.

Its vapourware but I seriously am hoping someone is still working on the project. Deus Ex needs this sort of thing as a new generation of gamers has grown up without playing it due inpart to the outdated graphics. Infinty Engine games are pretty timeless (with widescreen mods). The old Unreal engine games, sadly, aren't.

I find the graphics still to be pretty good, but younger gamers who have never played it before, as you mention may skip it as it's not the latest and greatest graphical game. It's too bad that mod was never completed, but it did take The Nameless Mod 7 years to be completed, so maybe they're still working on it.

Dragon Age
Mass Effect (series)
Half-Life (series)
Dino Crisis (Liked the first, the other two not so much.)
Resident Evil (series...though the first it my favorite simply for the lame live action cut scenes)
Contra
Pitfall
and still a bunch more.

Damn that would have been nice.
Another game i would love to see remade or hell even a sequal would be Outcast - and while i know there is the open Outcast project going it just isnt the same without the voice of David Gasman as Cutter Slade

Perfect Dark for the N64. I haven't tried the remake on XBLA.
You'll like it. It's the same game except with a smoother frame rate, and higher resolution graphics. Still a blast to play multiplayer.
