In the end though it doesn't really matter tbh. I've tanked everything with my full strength 2h warrior, so it's not as if you have to go all dex or all con just to get by.

Yes... except if you play as a Dex tank your Mage's high Magic means he heals even more % of the tank's health. Scaling works on both scenario.
Technically, true, but when you have such low health if your tank gets stunned, paralyzed, trapped, curse of mortality, or is suffereing from any other form of nastiness, you are at an extreme disadvantage compared to a con tank.
Any Warrior build has a high amount of Physical Resistance. And @ mobs hitting you for 0 damage, mobs do hit Dex tanks, they just won't land any attack. Plus, any decent party will have a CC Mage, which means no one is even hitting your tank. The only reason why you want a tank is for it to hold aggro and tank bosses in the tiny amount of time that they are not CC'd. It is better to have more chance to evade huge amount of damage than it is to tank them. Because you can survive any hit with base Constitution, a heal will regenerate your health back to pretty much full. Which means you have a higher survival chance without the Mage spamming healing spells on you.
There's absolutely no need to CC and waste mana when you're not even being hit for enough damage to be in any danger.

Dex is good stat wise, but max dex is boring. As in mind numbing boring. I see no value in playing a dex based tank as the PC. You have exactly one skill to use - taunt. Then go play the rest of your party.
Besides, a dedicated tank is not needed in this game. You get much more mileage out of having another dmg dealing character then a pure tank. Last game I made Alistar max strength/26 Dex specced to berserker. He was a lot of fun and still pretty really tough with some good gear.

Sword and Board? Strength until I have met the prequisite for gear then the rest all goes to Dex. Gear and fade will take care of off the rest. I'm partial to avoidance tanking. Its proven so optimal my npc mage is now a AW and only emergency heals when my tank is at 50% and usually the fight is over by then.
Again, this is all for nightmare.

When you have high DPS in your party, even Taunt with Frightening Appearance and Threaten on won't hold that well. This is why you want higher DPS to help along with that. It may not solve the problem, but it makes it less problematic.

Your tank should never have those status on him for long before your throw spells to either get rid of them, or in cases such as grabs and overwhelms, you should CC the target doing so. This is why CC is amazing.

Except your tank can't hold aggro because of the high DPS you are delivering, which is why CC is there to prevent monsters from swarming the non-tanks. Any decent parties will run either a part time or full time CC Mage. Not only does it increase the survivability of the entire party, it also allows your DW Backstab Rogue to continuously backstab, dealing more DPS. In fact, it lets everyone deal more DPS because they are not either getting hit or needed to spam spells/talents to keep either the tank or themselves alive, or both.
CC is one of the reasons why Mage is OP in this game, you should [ab]use it.

Also air of insolence is absolutely great for holding aggro in awakening.
