The details are lusher. And I wonder if art is also based on caste, like the artisans? Who drew those paintings or designes decorations?

There is no artisans guild though. Might be servant caste branching off.

I don't think so but if you ask the Shaper about the castes then he tells you that "According to our legends, seven brothers founded our empire. I was considering a Leliana romance for my fic but I haven't yet decided whether Raonar's old flame is still alive or not. Yes, massive spoiler. I'm worried that if I add his lover's death on top of everything else, I might get accused of turning him into a Gary Stu (too much tragedy in his past or something).

For the casteless, he speaks about them in general with distaste and after he says they should all die young the DC gets:
PC: Is that what should have happened to me?
Shaper: I'm sorry. I can speak with you as a Warden, but I cannot discuss your belief that you have previously been to Orzammar. (VO: Flat -- he is telling the player that no one will apologize for the hell that his life here was.) Your presence here was not recorded in the Memories. You do not exist. (VO: Flat)
It's even worse since every other time you stop talking to him he gives you either "Your presence here has been recorded in the Memories. I wish I knew what significance it has. (VO: Solemn, slightly worried)" or "Your presence here has been recorded in the Memories. I wish you well." depending on whether there's a King yet. Obviously, he's a lot more likeable as a DN or even a non-dwarf than to a casteless. He clearly doesn't really see the exiled DN as a true casteless but understands that since they've been exiled and reported dead it's an awkward legal status for everybody.
