I beat the game (ME 1) but i'm far from being done with the game, so i hit continue in the game menu and it sends me back to the final battle against Saren ? Is there a way to continue at all after beating it ?
Why cant i keep playing after beating the game ?

Nope, there's no way to continue after the end of the game. When it's over, it's over. You can start a New Game+ and start the game again with your current level, all of your gear, etc..

I fear that's not possible in ME1, although it would've been a nice addition for sure.

I suspect that people saying they wanted this option, when the game came out, is why it's present in ME2
