My shepard is going to hang up his revenant, pass the mantle of galactic protector to garrus and live with Tali on Rannoch

what do you think Rannoch is like? Do the Geth build buildings? Are there still quarian buildings on the planet? 

I imagine it a desert world. Bt now though most of the buildings would be gone and thats why shepard stays to rebuild Quarian society

Why assume a desert world?  I believe I saw something about more arid but that does not mean desert.

Don't know, something about the Quarians suggests deserts. Might be the headscarfs
It could be anything though

Depends entirely on whether or not she has to have her suit on.

If she needs her suit on, it's the mountains simply because of the view (and the wildlife we'd see while hiking).
If she can have her suit off, it's the beach so we can go snorkeling out in Hawaii with the whales.  Hell yeah.

Trying to lower standards in hopes of being pleasantly surprised, so that being said, maybe Bioware has the same ending for all LIs: Shepard standing with them on the Normandy looking out on the wreckage of the war...then they look at each other and smile or hug or something.

Think is possible, yes. Doubt ending would be that generic.

Generic for all members except LIs then? Romance NPC's obviously are heavily favored, but I would like a significant end to Grunt and Mordin as well. We're talking a lot of  content here.

Also, endings can't be final, right? So you can keep downloading DLC and playing? Like a continuation option in ME3 much like ME2?

Beach would be more like it because there is so much more culture and things to do. Crowds of people (Tali likes crowds) and watching the sunset would be priceless since i think she hasn't seen too many herself
