Though there's an important distinction: Tali
gets nervous, as in a condition that comes and goes and is -yes- largely internal. My gripe is that Fanfiction.net thinks it's a permanent feature apparent to... well, actually Shepard is usually the only one who notices, but actions described
should be visible to everyone else. It's like they're working to shovel just that much more drama into Tali's life, and it's pathetic.

As for ME1: I just thought I recalled her original dialogues during the whole bit with the council and the first couple conversations on the Normandy being a little less self assured. but then its also been awhile since I played 1.

That was more like resignation: she almost got killed for her data and hopes it was worth something. If it wasn't... well, she doesn't vocalize that far. She probably doesn't want to think about it. Not quite the same thing as nervousness, however.

Dextro-DNA is a term actually used in the game. It is acceptable.
It's a line used once by a bartender. It's a slang term, which -while still kind of annoying- is okay. It really bothers me however when it's used in contexts denoting it as an actual technical term, like one of the many discussions across the internet about 'What would happen if I licked Garrus/Tali?' and others where the term 'chilarity' should appear but doesn't.
"Dextro-DNA" isn't something Mordin should ever say ever, for instance.
