Just because Shepard is Paragon doesn't mean he's perfect and knows exactly want he wants before the opportunity even shows up and won't make any mistakes whatsoever in a relationship with a woman.

Because he has made some questionable decisions as Paragon. And not only once.

"Paragon Shep" is a mislabel.  There is no one specific paragon Shepard, there are infinite different versions, shaped by their choices made in game, to which there's a limit, and by the hidden motivations, to which there is no limit.  What you say is true for your Shep, but not all paragon Sheps.  That's why the game is great, we're given the same character in the same situation, and everyone has their own unique Shep in the end.
