So, I've played through ME1 a few times and unlocked a few bonus skills.
My newest character is an Adept, and I took Electronics as my bonus skill 'cause I figured it'd help with my weak defenses and give me something useful against synthetics.  But when I took my first point in my last biotic skill (Stasis, if I remember correctly), Overload disappeared from my power menu. The far-left slot on the menu is blank, and all my biotic skills (and marksman/shield boost/unity) are useable, but overload is missing. I can only assume this is some kind of glitch having to do with what slot on the menu the powers are supposed to reside in, and that  overload has been overwritten by another power. Does anybody know if this is a known issue that perhaps I have not downloaded the appropriate patch for via XBL, or if this has not been encountered/fixed yet?

I went to the BioWare support page and emailed the Mass Effect support, but their autoreply said that the official support was through xbox.com. So I went to the ME page on xbox.com, but it just linked back to the Mass Effect website. They're sending me in circles =[

Known issue. It happens with classes like Adepts and Sentinels that start with a "full" power complement. Hasn't been fixed and so it's safe to assume it won't be (I don't think the XBox version ever got patched at all anyhow?)

If you aren't a Bastion, Stasis might be okay to give up anyhow, if you really want the Overload power. You could also try mapping your quick-power (I think that's tapping the right bumper?) to Overload, before taking Stasis, and then accessing it that way for the rest of the game - just make sure not to overwrite it! Otherwise, I think you'll just have to accept the loss of Overload.

Ah, well I guess it's too late then. If I load this character in ME2 (assuming I ever get it haha) will it still have this issue?

Short answer: No.

Long answer: No, because talents were re-done for ME2. Talent points allocation have no effect on ME2; the only thing that matters is what level you are (Levels 50-59 get a boost to their ME2 starting level, and Level 60 characters get an extra-large boost to their ME2 starting level.)
