How do you see/use these? Like with a cage, how do you start the "open cage"-animation? (it's not on by default). I see mention of their various uses on wiki, but nothing about how to initiate these.

I believe it a side effect of SetPlaceableActionResult. In other words if you tell an object (which is currently closed) that it was successfully opened it will change its state to opened and, in the process, play the opening animation.
You might also be able to do it using SetPlaceableState.
