Here's something to think about.
Most love interest's unfolding events in Mass Effect are pretty good
Kaidan - sensitive, interesting, introspective guy who cautiously approaches the idea, but not in a way that negates wanting to do so.
Ashley - complex, seemingly renegade in morality but not totally, adds a nice element if you save her and she seems regretful you didn't let her die a hero. She's her own woman. The poetry isn't my thing tho, but i'm sure some ppl like that part of her.
Liara - naive, cute girl whose fascination in you and giving her the first time experience makes it a cute story in ME. Character is developed as she evolves into a hard-driving information dealer, leaving a wide range of possibilities for whatever happens next with her.
Thane - for a reptilian dude with black eyes, that dude has the stoic confidence thing going. Has the vibe a of a guy who'd be carrying on a conversation and then punch someone in the face trying to sneak up on him from behind without having to look where to punch. He's a loner by trade and choice, but not to the point where it's like Jack where he's unhealthy and screwed up. Beats himself up, but not in a way that can be described as weak.
Jack - She's so screwed up you're kinda like umm...yeah at first, but if you give her a chance and let the events develop it's actually a nice story. I still wouldn't pick her out of all the choices though because even if she starts getting better, she's been that way her whole life. Don't see a good future there, but who really knows?
Miranda - ah, the super clone. Everyone's pick because of the pooper shot right? Turns out she's the only female love interest that starts off completely ice cold to you, which is by far the most realistic female reaction to someone she just started a professional relationship with. Liara gets goo goo eyes, Tali doesn't announce interest until later and overflows when she does, Ashley cares about what you think from the beginning, and Jack is warmer to you if you gave her the files voluntarily. Miranda keeps her distance at first and only asks for help because she needs it (story context not the game context

). Of course, the loyalty mission's conclusion was gripping and her story brings up an interesting future issue with genetically engineered people and the roles of family. I ended up picking her for my Shepard because it's real; hers is the most realistic romance to me.
Garrus - his character is malleable according to what advice you give him and FemShep actually proposes the idea, which isn't all that cool to me as a guy because if I don't start things with a girl myself I'm usually not interested. Add that to the sheer awkwardness of the romance scene and how down on himself he is, despite his awesomeness with a rifle, and it's not that great a romance to me. Of course, he is a sensitive guy who cares and he deserves some loving, and as indicated by the forum he has huge support, so my opinion isn't the majority here.
Tali - girl in ME that misses her family and friends, emerging woman in ME2 that wants you in her life, but is still in that first time mode Liara was in in ME. The trial mission was gut-wrenching and her reaction was very authentic, given the context. Even though it's a really good moment to catch her when she's down and make it all better, it's still a bit mushy for me. Too melodramatic, although I suppose seeing your father die and being tried for treason would be pretty hard.
Finally, there's Jacob
Denies his worth to you when Miranda does him a favor (in her own way, but it's still a favor). Talks like he's a cheap porn actor, and that makes you wonder about the authenticity of the comments he makes and the questions he asks about you. I call bull**** on his '....I'd walk away" comment because really? You wouldn't really walk away, you'd tell him or her to drop the conversation, just like if you ask him about Miranda. He wants to fight the bad guys, but every time he talks about it he mentions what other people think. 'Maybe we'll be remembered differently...can't count on them to think about it as much as I have?" You know how it goes, the real work isn't publicized.....
Umm who cares? You need an extranet ad to feel recognized? How about a thank you card from the Council with an airquote about the batarian scheme? I look at him as a guy who wants to be a hero but not enough to put himself out there or stick to his guns, all while being too wrapped up in his own issues to care about other people genuinely (see: Miranda). To his credit though, he did handle almost everything right when he confronted his father. That was a stand up moment for him, and he did well in that respect.
My point is that no 'romance' is perfect and even though the options are mostly decent or good with emotional moments, it wouldn't make sense for every story to be rainbows and fuzzy bunnies. Jacob is 'that guy' and there is always 'that guy'.
To be fair though, if I were on the team, I would have a new love interest for male Shepard that is hot, everyone goes goo goo eyes for her, but ends up being a drama queen or stabbing you in the back in some way. That kind of character would be a great counterbalance to Jacob being 'that guy'. If that doesn't happen, one of the current female LI's, in my vision of fairness, would go sour, like Tali ending up turning against you if you push for peace or side with the geth, or Ashley/Kaidan having to hunt you down if the Council disavows you for working with Cerburus, or Liara going off the deep end and leaving you hanging if you want to get back with her, in her obsession to kill the Shadow Broker.
Just some thoughts
