Edit: To answer the question, he knew the woman. She was a friend of his dad's and was pretty much family, more or less, in his world considering how much she covered for him and his dad.

I have no idea what junket is, but maybe it varies from country to country? Wiki says this:

My husband had me watching it over R&R. I couldn't get into it, But I thought he was capable of emotion, just didn't feel guilt.

Hey, or ricotta cheese, which I believe is the original method - that's Italian style cheesecake.
Personally, I do prefer New York style with cream cheese. Italian's not as thick, creamy, and sweet to me (I've tried making them both).
If you want an amazing cheese on it's own though, give this a try. Cocoa and cheese - it is DIVINE.
