You know, I've never actually hardened Alistair... in that sense at least (I'm sorry, I couldn't resist).
Mostly because when I think of a hardened Alistair I think of renegade Kaidan from Mass Effect, which I despise. So, how much of a difference does it really make when it comes to Alistair? Curious, really. Does he lose his goofy charm or is it more a subtle thing?

I've only played ME once, and didn't know about renegade Kaidan, so I'm not sure how Kaidan changes. I can't imagine a renegade Kaidan.
With Alistair it's really just making him realize he has to stand up for himself. The biggest difference is how he accepts the kingship. If Alistair is going to be king, I always harden him. He doesn't regret it as much, and actually will ask (or demand in some cases) that he be king.
Also, if Alistair is going to be king, and you want to continue your romance and you are an elf/mage/dwarf you have to harden him in order to convince him to keep the relationship going.
If I'm not going to make him king, then sometimes I won't harden him. But hardening him doesn't make him meaner, or renegade in any way -- it just lets him look out for himself and his own needs better.
I highly recommend Cme's mod. Not only do you get a hug, a fantastic array of love scenes (by Dahlia, tmp & BSC), and broken dialog & bugs fixed, you also get a much better choice of lines in which to harden Alistair.
