It´s basicaly a grilled tomato sauce with a nice extra of levander and similar herbs. It has to settle down for a whole night and tomorrow it will be just great.

You need:
-Tomatoes (Raf work best, but any decent one will work too).
-Garlic (natural one, not salt or powdered).
-Levander, rosemary and time.
-Olive oil.
Grill the tomatoes in olive oil slowly one you cut them in slices (preferibly thick ones). The idea is making them soft and charring the peal, not reducing them to pulp. You´ll know they´re ready once the sides are shinny.
While grilling, add the above herbes, a bit salt and if the tomatoes are particularly acid, a bit brown sugar (enough to kill the acid taste but not making them sweet).
Once the slices are grilled, put them in a plate and peal them off. Use the remains of oil to heat up some slices of garlick (at your taste) till they get golden.
Add the pealed tomatoes, the garlic and remains of oil in the jar of a processor, make the blades twist and reduce everything to a thick soup. Let it rest for some hours so to oil gets thick.
Works best for grilled meats or seafood.

It´s perfect for those morning you wake up completely sleepy and barely able to communicate till you have the "dark master".
As you can imagine, I like coffee "the Mediterranean way"; that is; espresso or mocca; thick on taste, thick on aroma and not in big quantities.

Coffee is one of the things I miss most from Spain whem I am in the US: seems like you can only get a decent espresso in just one place in a town like Bloomington!
