How does shield work? More specifically what exactly do the strength multiplier do? Does it give +1 defense per strength as such making strength pretty much strictly better than dex for a sword and shield based figther or what?

No the modifier adjusts the damage you do on Bash/Pummel/Overpower. I believe all shields have a modifer of 1. If you want defense you need dex.
