Other classes do the job very well though, arguably better than the Soldier if you know/like how they play. I just found Soldier to be the "easiest" in terms of fighting and not really thinking much.

I've played all chars on insanity and I never died once in a full playthrough with a shotgun assault sentinel (other than bugs and real life distractions, and on one occasion just trying to take some damage to see if it was actually possible for this char to die)

Now, don't misunderstand me, the Adept, Engineer, Infiltrator and Vanguard are also great classes and fun in their own ways. Infltrator was probably the most fun for me as their is just something awesome about cloaking and them killing an enemy from halfway across the map. Engineer is enjoyable just watching your Combat Drone cause chaos while you dismantle the enemy's defenses. Adept is great, especially with Warp Ammo, because you can toss enemes around just to see where they land or how far they can travel. Vanguard is probably the most difficult to master but the most rewarding once you do; they have to be played aggressively but Charging across an entire room and placing a shotgun blast in their face never gets old.
Anyway, it really depends on your playing style and what you would consider easy.

I wouldn't suggest playing with a Soldier because it's very boring...but ya it's totally DUUUURRR faceroll.

Adept is the only class that can lock down a protected enemy, but apart from that, it's one of the worse damage dealers and it's also very vulnerable compared to soldier (health), sentinel (tech armor) and infiltrator (cloak).

It doesnt matter.The question was which was the most easy class to play. Engineer and Adept are the classes that have the most control of the battlefield with their abilities.They dont have to hurry killing things and could take their time.Even on collector plattforms or the biotic bubble(scion and husk attack/infiltrator is definetly not the easiest class there) .
This is my definition of easy.
Most dangerous situations are cakewalks for the adept and the engineer(except geth hunters for the engineer).

Good use of and understanding of abilities =/= easy.
All the classes are "easy" once you understand their abilities and where and when to use them. The soldier completely skips this learning curve, making it the easiest.
Soldier is the "easiest" because it is also the simplest, never do anything but HAR and shoot.
Of course, this is geared to someone who has decent FPS/TPS skills.
An RPG-to-the-core player would probably find the ability-heavy classes easier.
