Soldier is the easiest class to play on insanity. Give it energy drain and a revanent with inferno/disruptor for geth and every mission with shielded enemies becomes a joke. Just charge in with the revanent point blank, people panic, and when your shields are down, find some poor sap who still has their shields and drain it, and repeat the process on him. Having Kasumi and her flashbang makes the soldier even more devastating.
Adept is a good choice too. Just singularity, shoot shields, and warp, or pull if the defenses are down. Just use the cain on the YMIRS if you can't figure out a place where he can't flank you, but the only YMIR battle I know of where you can't find somewhere to prevent being outflanked is Daratar.
Easiest class for an insanity playthrough?

Yes.I only use on huge groups,so the ammo isnt a problem.Good use of cover remove the need to replenish shields.
