Even if Leliana promises to see things differently on a conscious level, it's clear a lot of her prejudice is subconscious so that would be a reason to give elves pause, just like the fact that Zevran tried to kill you is a reason to make ANY character hesitant. All of these can be overcome, of course, but given that you only have a year in game to undo the results of a lifetime of ingrained beliefs...it just doesn't always feel organic to me.

It's definitely not racism, or at least it's a very low level of racism. I'd say Leliana is stereotyping elves rather than being racist. She never says she hates elves (in fact she seems to be very much in favour that elves should have economically better lives), but given the fact that she's seen elves as servants for most of her life...I think some of you judge her too harshly. Her racism, and I think even that word is a bit much, comes from ignorance not hate. Ignorance can be overcome if not backed by hatred.
I also think that our modern politically correct world very much colors
(the audiences) reaction to this racism. In our own world's not too
distant past racism was very common place, and still is in many places.
100 years ago, everyone was racist about everyone else. Not just
talking about skin color either, pretty much anyone from a different
country was going to be stereotyped by others with racist
generalizations.
