Jack = Thane (tragic romance with a dying person who's done bad things in their life; both final scenes include breaking into tears)
Tali = Garrus (cute, somewhat awkward romance that grow out of previous friendship and has cross-species difficulties)
Miranda = Jacob (mostly physical romance, very flirty, kind of a fling, blatant fanservice in final scene)
They're not significantly different.
That depends on to what extent you think the human vs alien factor matters, and by extension, human gender-based secondary sexual traits matter. Jack is human, Thane is not. That, to some players is as significant a difference as gender.
If these things didn't matter, then BW could just use only Asari as LI to cover both female and male shep and call it done. While some people would be very satisfied with that, I am extremely glad they provided more variety.
I'm sort of split on whether Thane should/could have been human. His alieness increases the feeling of being in some far off, future world and his design still manages to be attractive in a human male way, despite not being human. Garrus on the other hand....aside from the voice (melt!) and the height...Turians just have funny shapes. I still enjoyed the subplots, though. Even Jacob's had its moments.
