I feel like i'm incurring the wrath of some really bad meme by asking this, but I just can't sustain my curiosity any longer. What the heck is "Sheploo"?

It's basically a name given to Shepard's default appearance. It's based on a dutch model named Vanderloo.

Shepard + Vanderloo = Sheploo.

More specifically, it refers to the Shepard seen in ads and commercials.

It took me a lot longer than a week to figure it out.

Query: Why'd they pretty much copy his face down to the smallest detail but make his scar backwards??

Probably because they decided that the facial scan wouldn't be enough to explain why that looks a bit weird. Just aesthetics.

I've always thought this.  And I specifically wondered what he would think of the creepy face Sheploo makes in the Miranda romance conversation (you know the face I mean) and if Vanderloo would really ever make that exact face. LOL
