I'll start:
Six months after the suicide mission and the war between humanity and the Collectors, Commander Shepard and two squad members are on an arbitrary mission to investigate an abandoned human colony, hoping to find any sign of any remaining Collectors. A signal is sent to Joker aboard the Normandy, requesting Shepard's immediate meeting with Captain Anderson on the Citadel. Shepard's mission is interrupted by Joker, who doesn't know anything other than that Shepard has to be on the Citadel within a few hours.
The Normandy flies to the Citadel, the scene goes right to Shepard's private meeting with Captain Anderson. Anderson mentions that the Illusive Man has a plan that involves the return of the Reapers in an unprecedented shape. Right before the conversation comes to an end, C-Sec announces immediate evacuation of the Citadel. Something has gone completely wrong in the blink of an eye. Without hesitation, Shepard takes Captain Anderson and his/her two squad mates and heads right back to the Normandy.
Joker, not aware of what's happening just yet, is surprised to see old friend Captain Anderson onboard the Normandy, and asks for an explanation as to he was bought onto the ship. Shepard doesn't have the time to explain; (s)he gives Joker the order to fly out into space before any serious harm is done to the Normandy.
Shepard takes the captain to his/her private cabin, still not knowing what happened on the Citadel. As the two step in the room, they are both shot down by one of the crew members who was anticipating them showing up. After that, they are immediately put into an escape pod and gone without anyone noticing what happened.
Few hours later, Shepard and Captain Anderson both wake up on an unidentified vessel. Locked in a room with only walls and windows around them. They try calling out for help, but nobody is answering. Shepard tries to look out the window for anything that might catch his/her attention, and all she/he saw was a brilliant starry background staring back at her/him. Captain Anderson suggests that Shepard contact Joker through a small, accessible terminal that was lying around in the same room. After several tries, Shepard fails to contact Joker. The Normandy isn't responding, neither is EDI.
At last, Shepard tries to contact his/her love interest. Despite the unclear signal, Shepard finally manages to receive a message from their love interest, which was "They're all around. You must find a way. Trust no one, no one! They're coming. They won't give up. They don't know how to give up! I hope you... I ..ugh... I lo... love... *signal gone*".
There you go. Notice that these are merely opening scenes, meaning things could change completely later on. So don't take them too seriously. We're just presenting fan-ideas after all.
I'm actually working on another idea of the opening scene right now, but haven't finished it yet. When I do, I'll either update this post or paste it in a new reply. Yes, you may show us more than one opening of yours!
