I have seen 'Clone Wars' Season 1 animation series and I found some of the Jedis and Siths interesting. Asuka, Sekura and some masters that were not acquaintance enough in the original movies
combined with presence of Yoda, Count Doocu, Obi Wan and Anakin ... it has a great atmosphere and story, plus that Its Visual Effects are as good as a movie.

For the Sith, definitely Kreia because she was a master of the force and a master manipulator, more so than Palpatine and she even knew how to manipulate force bonds themselves to influence and guide the Exile.

Since the original question is who is the most influential, not powerful, the most influential Sith was probably Darth Bane for massively restructuring the Sith order. As for the most influential Jedi...that is a tough call. Probably Yoda for not only being an important commander in the Clone Wars, but for training so many Jedi in his life time. He taught Dooku, who taught Qui-Gon, who taught Obi-Wan, who taught Anakin. Yoda, the last surviving Jedi by Empire Strikes Back also passes on the torch to Luke Skywalker so he can rebuild the order.

That's my take on the question anyway.

Skywalkers.One destroys the order and the son rebuilds on top of one of the mostp owerfull sith temples. Look up Exar Kun and the temples at yavin.

While I do agree Bane is very important, Kreia did start the first Jedi Purge and ressurected the Sith Order as well as taught Revan the ways of the Sith which led him/her to the Sith Empire and the events of KoTOR

Then again Exar Kun is equally as influential IMO because he helped spark the events of KoTOR 1+2 by convincing Mandalore to attack the Republic

Jedi is harder to pick, many famous and influential Jedi have been depicted in the Star Wars universe, one could argue that Disciple or Haindmaiden is very influential because they rebuild the Jedi order after the first purge or Luke because he did the same and defeated Emperor Palpatine and also, rebuilt the order.

I think you are right in one aspect, but the true Influence is to Affect allover the galaxy with one Sith/Jedi Career. so Although Darth Bane is one of the most important Siths ever, I've given the Prize to Palpatine.
