I want to play on Nightmare level but I get so sick of being stunned all the time. At this difficulty level, will I be able to get my mental resistance high enough to avoid being stunned, or is it pretty much just gonna happen no matter what?

I think some stuns are stopped by mental resistance, others by physical, though I've never really tested it out. Some of my warriors seem to resist pretty much every knockdown and stun... I think most of the more common stuns at least are stopped by physical resistance. Your best bet is just using a 2h warrior, though.

Notice how few abilities check against mental resistance. And of these, only Horror (Desire Demons, Gaxxkang) and Captivating Song (Marjolaine) are ever used against you, rendering mental resistance nearly useless, at least in DA:O.
Physical resistance, OTOH, comes into play all the time, so it would behoove you to look to increase this, at least on your front-liners. Bear in mind, however, that 100% physical resistance does not make you immune to these effects. Here's the formula if you're interested...
ResistanceChance = [Target Resistance Score] - [Caster Attacking Attribute] + ([Target Rank] * [Target Rank Modifier]) + ([Target Level] * 5
- ((Difference Between [Target Level] and [Caster Level]) * 5.0)
If ResistanceChance >= [Target Maximum Resistance Chance]
ResistanceChance = [Target Maximum Resistance Chance]
CheckSuccess = (0.0 <= [Random Decimal Value] < 100.0) <= ResistanceChance
