I have noticed that some people are able to 'like' something on someone else's profile, by giving it a thumbs up. How do I do this? I can't see anything that I could click on to like something.

At the user page (recent activity) where there are tabs for My Friends/Everyone, under each of the daily feeds you see, there should be an option that says 'I like it' | 'Comment'. The like it is the thumbs up. If you're not seeing these, it might have to be something you switch on via your options, but I could swear I've seen you comment on something, so the Like part should also be showing up.
Edit: And I should add - this, in turn, will cause it to show up on profiles as being "liked."

Thank you! I hadn't noticed that tab and I had been looking at individual profiles. Now I feel like a stalker. I was getting the comment option, but no the 'like' option.

I could be wrong but I don't think you can do it on profiles directly, only on the 'What's New > My Friends' activity rss feeds. You'd have to be the users friend to see updates on your friend tab, otherwise you'll just see random users on the 'everyone' tab.
On these tabs you can see the 'I like it' | 'Comment' under each entry.
