As someone who has studied medieval warfare a bit, I can perhaps shed some light on the use of troops and tactics.

The scottish shiltron, the greek phalanx and the swiss pikemen, are all variations of the same theory. They rely on massed disciplined pike formations to break up cavalry and less cohesive opponents.

The keyword here is disciplined. The base for all these formations where soldier citizens. They existed mostly in countries with strongly egalitarian traditions. They could be farmers or city dwellers, but they would still be freeholders and citizens. They depended a lot on civic pride for unit cohesion.

Other disciplined infantry, like the later roman legions, where recruited from the poorer classes, but they where near professional units which used drill and training to achieve cohesion.

It is not, in my opinion realistic to believe that elves could have been raised as heavy pike infantry. They could have been used as irregular troops harassing flanks maybe.
