If I'm trying to add items into the game, do I need to fill in the inventory subgroup on each item?

I think you only need to do that if you want it to be different to that of the base item.

Each item has a base type (defined in BITM_base) that has a store panel defined. This determines which category in the inventory screen that items belongs to.
If you want to change that, then you would have to specify the inventory subgroup when adding the item. For example, you have a sword item which would normally be under the Weapons category. But if you want it to be a ceremonial sword and want it to appear as a Miscellaneous item in the inventory, you would change the inventory sub-group to 2 (5 is the default for weapons)
