I saved a game and when I went back to load it the game doesn't give me an option to load, quick load, or continue. It acts like I never started a game! does anyone have an idea what happened?

No, but first step would be to see if you have save game files. You should see a folder in My Documents\\Bioware\\Mass Effect 2\\Save\\ with your Shepard's name in the folder name, and in that folder should be at least one *.pcsav file

Have you logged in to the right profile? Has anyone else been using your PC/Xbox and might have changed the default login credentials?
