Depends on what you want to specialize in, and they're found in all sorts of places. Some can be taught from party members if they like you enough, like Alastair teaching you to be a Templar, or Morrigan to be a Shapeshifter. Some you'll get from NPCs if you make the right dialogue choices or take the right quest path, like Blood Mage from the Desire Demon, or Champion from Bann Tegan. You can also buy tomes that (theoretically, I haven't bought any yet) should teach you the specialization if you're willing to shell out a fair amount of sovereigns.
I haven't found them all yet, but they're out there.

If you want an (incomplete) list...
Warrior Specializations:
Champion - Taught by Bann Tegan after you complete the Redcliffe quest line, but you have to ask for a reward.
Reaver - Dunno yet.
Templar: Alastair will teach you this if he likes you enough and you ask about it.
Berserker - Not sure, but I'm betting Oghren can teach this.
Rogue Specializations:
Bard: Liliana teaches this, but she has to like you and you have to ask.
Assassin: Zevran might teach this. Not sure.
Duelist: Isabela taught this at the Pearl in Denerim, but you have to beat her at a game first.
Ranger: There's a tome sold by the dwarven vendor at you camp, dunno if there are other ways to get it.
Mage:
Arcane Warrior: An elven ghost will teach you this deep in the ruins of the Dalish forest.
Blood Mage: Make a deal with a Desire Demon for the soul of a child during the Redcliffe quest line. Or bully her into it with high dialogue skills, but your more upstanding companions won't be happy even if you do it this way.
Shapeshifter: Morrigan will teach you this if she likes you.
Spirit Healer: Wynne will teach you this if she likes you.

Reaver is in the Urn of the Sacred Ashes quest. It should be pretty obvious who you can learn it from.
Spirit healer can be learned from a book, as can shapeshifter or Templar, IIRC.
Zevran can definitely teach you assassin and Oghren taught my character berserker.
