Hell yes!
They should redo one and two with the ME3 controls and graphics. I'll pay for that trilogy, not that crap they just threw out there. I've bought all the games already why would i want the trilogy set for xbox360 and if you've played ME2 and 3 on PS3 why the hell will you want number one in it's original form with all it's flaws.
Don't get me wrong I loved the original game but no one whos played the later versions will want to trudge through the game play again. Put a team on an update Bioware lets get it done!
Would anyone BUY a Mass Effect ONE remake?

This would be a big waste of money and time. If they were to remake a game with the story of the first Mass Effect, I for one would want the content and gameplay to be new, not warmed over re-hash of games from the last few years. And it could more easily be justified by making a completely new intellectual property in a science fiction setting,

I would pay double...even triple for an ME1 and ME2 remake where they have the same look and combat as ME3.

I would definetely buy a ME1 remake with ME3 animation and combat, but i'd also want more dialouge and scenes to buff up the relationships in the game, like for romance specific content (e.g. unique dialouge with liara if romanced after noveria).

I really enjoyed the way that ME1 felt compared to ME3. In my opinion, ME1 was more relaxed than its sequels and I really liked that. But I absolutely loved the weapon system in ME3. The weapon system being the mods and how you can upgrade your guns.
