What is the advantages/differences between using UT_Talk vs BeginConversation?

Did you have a look at the function UT_Talk()? At the end, it calls BeginConversation() as well, so all the other stuff before that is the difference. This includes, not triggering conversation if the party is completely dead, checking for module wide dialogue settings, optionally reviving the party, logging, tracking statistics, and some more. Unless you specifically want to avoid some of these, UT_Talk() is just giving you help and additional options.
