I'm sure this question doesn't warrant a response from them considering I've pretty much answered my own question in the original post. If they were to come in here and respond, they would say something along the lines of "The reason default male Shepard is modeled after Vanderloo is because he is the poster Shepard for all the marketing done on the game." Also DarthRomance does bring up a good point about confusing outside buyers by having another poster character of a different gender.
