I imagine KoToR 2 would've been on this list, but the restoration project fell apart.

I say games that bring me lots of nostalgia are awesome, Super Mario Bros 2 / Teenage Mutant Ninja Turtles 2 on the NES, Donkey Kong Country on the SNES. Super Mario 64 / Mario Kart 64, Legend of Zelda games. Pokemon games on the Gameboy (even Pokemon Stadium on the N64). Metal Gear Solid.
Edit: Also add Unreal Tournament 2004 to the list, how could I forget this one! Had put over 800 hours into this game.
And more recent: definitely Mass Effect 1 & 2, I've put over 300 hours in ME2 already and I'm definitely not done with it yet.
I have also been playing Modern Warfare 2 recently, I was really biased about this game without ever playing it first, but it's really fun - haven't played a CoD before this one though.

I could NEVER get used to the controls. I mean auto centering when you let go of the stick? What the hell?

My heart keeps coming back to these games; their masteful story telling, the gruffy Masterhief, the excellent VO and the intriguing steam punky setting won't ever let me go. RIP Looking Glass. You're still missed. I did like Deadly Shadows as well, but more so out of loyalty. The game couldn't stand up to its classic forerunners.
Splinter Cell
With Double Agent crossed from my mind and Conviction taken with one eye tightly shut...
System Shock 2 and Deus Ex and Beyond Good and Evil follow quickly after.
And holding their own special place are the Mass Effect series, Knights of the Old Republic (1) and Jade Empire.
Howeva' if anyone was to ask me what games gave me the best fun by strictly speaking gameplay.... Mass Effect 2 and Splinter Cell Conviction would currently try to butt heads for first place.
