Garrus is the one person on the ship that is most like Shepard in the way he thinks. I am like you, I don't know what the romantic spin would be, I won't play a female shepard (and no I'm not against it, all my Jedis in Kotor were female), but I just don't feel it fits this particular story line. As far as just normal friendships go, I think Garrus will be the one person that is going to stick it out with you the entire way.
As for the romance angle, I think it's to lend a touch more realism. People often will have sexual relations with people they usually wouldn't in a situation of stress or hopelessness, because of the intense physical and often emotional experience involved, it's a way of taking your mind off your troubles when all else seems lost. I think people are reading WAY too much into this. I may die, there are several attractive members of the ship who work closely with me, and may have feelings for me, yeah, I'm gonna hit that. As for Tali, well, to put it bluntly, she's an easy lay, because she already idolizes Shepard. And lets be honest, with all them women walking around on the ship, I don't care how disciplined I am, I am going to be spending a lot of time in my quarters with some Jergens and my copy of Fornax.
Okay, a bit crude, but I am just in that kind of mood.

Yes, femshep had the worse romance option to choose. But for me, Garrus is perfect for her because he's the only male that had a history with her and followed Shepard throughout both games. I just like to see both of their relationships develop, doesn't mean I'm actually attracted to Garrus. It feels like watching every movie with romance subplot anyway.

That's not a racial incompatibility thing, that's a character thing. Oghren isn't actually interested.In DA you can flirt with Oghren, but you can't go all the way - It's fine, it's humor, it's more adult.
Racially, a Female Dwarf Warden can sleep with a human male (Alistair).
There'd be no reason why a female human warden couldn't sleep with a dwarf male.

But the characters are different because, while there is a 'base' to Shepard, players can play him/her in very different ways. For example, you can play Shepard as anti-alien, only begrudgingly accepting their help when forced to, or you can play Shepard as someone who wants all the races to get along better, and humanity to prove it's worthy of a place. You don't like one character, so you romance another (or romance none, if you fancy it). Just because an option is there doesn't mean you are being forced to take it. So I don't quite understand why having 'total opposites' available as options is an issue. If they were all too similar you maight be stuck with noone you like.
As to the whole 'alien sex is wrong and weird and not for me' vibe in this thread: some players like certain characters, some don't. No one forces anyone to play a romance they do not want to. And Shepard isn't wandering up to random aliens and demanding sex: s/he is talking to people, building relationships with them. You get attracted to the person, not the body. That's how it is in real life with human/human romantic interaction, and so that's how the Mass Effect universe functions, the aliens being the sapient beings they are. And again: if any of the relationships don't play to your tastes, you don't have to play them. (Having said that, if you wanna RP a Shepard who would jump every Hanaar they meet, be my guest. I know onw of my Sheps keeps a copy of Fronax close in her quarters.
Hopefully, ME3 will allow us to concentrate on developing the relationships that already exist, rather than complicating things with lots of new ones and thereby diluting the experience. I do want there to be bromance options for all the characters who we aren't romancing, though (different dialogue depending on the relationship: not LESS of it.)
But hey, the most important thing to remember here has already been said by many: It's a game. A game that provides many options - not necessities - so, y'know, chillax.
Subjectivity. It is win.
