I think Alistair's so innocent in a lot of ways, but trying
desperately not to be, especially surrounded with that crowd. He doesn't want to stand out as such, and I think he's also younger than most of them, except maybe the Warden, so that doesn't help. I think that makes him go with the flow a lot more than he normally would.
I have a bad tendency to make him a bit too goofy fratboyish on occasion, though. But in a way he really is a bit like that, and with cause. He spent years in the chantry surrounded by men, and then became a grey warden, again surrounded by men. I think he has no concept of how to deal with women so he'll either treat them like he would a guy, or get nervous. So, it wouldn't occur to him that saying a girl eats like a pig is a bad idea since he'd say the same thing to a guy. (for example)
In terms of the differences between them, I don't necessarily think Anders is
smarter than Alistair, but he's far more willing to display his intelligence. Alistair isn't going to be using five dollar words just because he's had it ingrained into him not to do anything to make himself stand out. Anders' dialogue, in game, seems to use much more complex language, both dialogue/word choice and sentence construction wise. He's also prone to bad jokes, but not self-deprecating ones. "My" Alistair is all about the self-deprecating humor.
At least, that's how I write/see them.
