Math and a bit of botany would come into play with herbalism, and I suspect the Chantry makes a good chunk of cash out of selling potions mages make. Biology and physiology with healing, as well.
But I would imagine the teachers are all other mages. So it may not be that the Chantry teaches them, say, history or literature, but that they make sure other mages do. And that may not be because the Chantry cares if mages know either of those things, but just because it fills up more of their day, and busy mages have less time to learn forbidden techniques on their own or get into trouble.
Plus, I would imagine the mages who do leave often do so as healers, which would put them into situations where they interact with the highest levels of society. Sending out semi-literate doofuses who can cast a spell but can't count past ten when their shoes are on and don't even know the name of the last king wouldn't paint the Circle in the best light. They do claim, after all, it's a place of learning. (Wynne says this herself when you meet her, if you comment on the children in the tower).
EDIT : I believe, as well, that the day to day operations of the tower are run by the mages themselves. The Chantry supervises, but doesn't intervene (well, unless they start doing something the chantry would object to). So it could be that the senior mages feel that the children should have a well rounded education, and the Chantry doesn't argue since they see no real harm in it.
