They are just easier to draw. I've changed a graphic style a bit for my Cullen comic, because while I was making Anders-comic the most part of my time was eaten by his tevinter robes. And the second reason was that I was reading a book about real templars and was taken by its illustrations. Besides simple robes do not need to wear smallclothes beneath them, that was suitable to Anders' banter with Oghren and I could imagine his robes-adventures back in the Tower. 
I love that medieval style Templar armour. I'm sure there's a reason why fantasy games seem to like to use that big shoulder pad look.
Would be nice to see something a little more 'authentically' medieval. Oh well have to settle for your comic Gala ;-)
I wonder why they wear robes too. In DA I can understand it in the tower - its like a uniform. But after that - seems odd.
From a game perspective - its probably just tradition that if you have the mage class you must code them various forms of crappy looking robes to wear. I will say that the DA ones are among the best I've seen however.
