I have done absolutely every side mission available (including BDtS and PS) and only have Ilos/Citadel left. There may be a couple planets with some minerals I haven't collected to add another couple thousand xp but I've already hunted any thresher maws and other big xp enemies there could be. Will I have enough xp to hit 60 by the time I get to saren or am I going to be a little bit short?
~60k xp from 60, can I make it?

Hmm... it's going to be close, I think. When you're doing the trench run on Ilos, get out of the Mako and take everything out on foot to get extra experience points.

During the run through the citadel, there is a scene outside where you have a choice of 2 paths. One is in the open, where you face geth and turrets, the other is through a maintence shaft, packed with geth and krogan. Do both. Go through the open area, killing geth and turrets untilk you get to the end, then go back, and take the shaft, killing the geth and krogan.
Also, when faced with the dropship, wait until it stops dropping geth before activating the defences, and then only activate one, allowing the ship to last longer, and spawn more geth.
Run around on the Normandy and make sure you speak to absolutely everyone, about everything. Could be a few convo options you missed.
