Just because YOU would be willing to have a romance option doesn't mean that WYNNE would want to. No matter how much she likes you. Did you ever think about that? Female characters do not HAVE to be sexual dispensers. They have personalities and their own individual wants and needs.
It isn't so much that a player wouldn't want to get with an old lady, it's more like the old lady doesn't want to get with the player.
Travel with Wynne in the party and you will find out why she's not so open to the idea of anything long term. Also, try travelling with her AND your love interest in the same party primarily. She will pull you aside and comment on how love is an impractical pursuit given the group's responsibilities. You might note that Morrigan says something similar about love, but the comparison is not direct. She doesn't want to be tied down and trapped by that label, and she doesn't have the same sense of duty and responsibility that Wynne has, so her own reservations about love do not interfere with romantic interaction.
In short: "Abstinence for the Wynne."
