I couldn't find a list of metal locations, but there is a system guide on the Mass Effect Wiki that takes you planet by planet, telling you what kind of mineral types you might find on each one.

You MUST drive the Mako in a search pattern to find all the metals and other collection goodies. There are many things that do NOT show up on your map

There are actually way more of each type of metal than required. Survey planets in systems too.. its not just on land.

by searching around each planet, you sometimes will get a random encounter: a Thresher Maw in the middle of nowhere, a group of badguys to shoot at. These encounters did NOT show on the map when first landed, I had to drive right up onto them

The ME wiki walk though has a guide for side quests.

Wiki is good. The official strategy guide has resources for all planets with maps, which is useful because you can have it to hand.

Those checklists are awesome; I've used his checklists for both games before.  Very useful for many things, including finding which planets I can just scan from orbit to get the last few need Protean Data Discs or Matriarch Writings.  Also very useful for knowing exactly how much Charm/Intimidate will be needed for each mission.  Hell, just useful for anything completionist related at all.
