Why do people need to clearly define their sexuality?
So, I'm a straight guy that tells a girl that I like her in a romantic way, but I never say whether I'm straight or not, does that mean that I'm also possibly gay because I never stated that?
I'm not sure what you're asking, but let me clarify:
Very few of the characters in the series, least of all Shepard, ever state categorically that "yes, I'm into guys/girls/gerbils/aliens with weird body parts". The option to be romantically involved with certain characters doesn't automatically define a character's sexuality, most obviously if the player never becomes involved in any of them.
It is possible for female Shepard (as far as I know) to tell Liara that she's only interested in males.
Ironically, it's also possible for a male Shepard who is romancing Kaidan using the cut dialogue to say the same thing (that he's only interested in men, see the link I posted previously).
But if characters don't take that option and don't respond positively to any of the romances on offer, it becomes difficult if not impossible to assign them a sexuality, even if you wanted to.
