Regardless, even though they omitted the MaleShep/Kaidan dialogue choices for Shepard in ME1, they did not ADD anything to make Kaidan emphatically and exclusively heterosexual. They didn't change anything about Kaidan, they just made Shepard unable to go down that road. That doesn't mean one of my Shepard's wasn't considering it.
On the other hand,my Shep's actions say he's straight: he romanced Miranda (had sex with her,said he cares about her) but he never showed even the slightest interest in other men.In fact,when Mordin presumed my Shep is interested in him,Shepard literally laughed in his face. He doesn't need to say "I am not gay",his actions speak for themselves.
But you can't prove your (male) Shep being gay or bisexual since you are never able to show any interest in other men. You can play the game without romancing anyone but that doesn't prove anything. He might be gay or hetero or both,but just might.
What does this have to do with anything? I don't HAVE to prove anything about my character to you or anyone else. I'm not sure what your point is, but it's not really relevant.
And by the way, Shepard laughing in Mordin's face might have more to do with Mordin being an ALIEN than Mordin being a male alien.
It sounds to me like you want to make sure that there are no gay Shepards out there, and that you'll go to great lengths to "prove" that there are no gay Shepards out there. Well, even in the first game, MaleShepard has the option of romancing someone who tells him "I'm not a woman".
