With Zevran, it's more about the warden and making sure that they're ok, no matter what decision you make. With Alistair, it's a bit more about him (don't shoot me fangirls) hardened or not.
Edit: If you have a dialog choice "Do you stare at everyone like that" you can turn the romance back on. Otherwise, most likely, it's off for good.
Second edit: Wow, I rambled a bit. This probably isn't too coherent, but I haven't had enough coffee yet!

Also if I do break up with Alistair, does he get a sucky ending then? Such as becoming a drunk (I heard about this possibility) or I dunno, sacrificing himself.
EDIT: I no longer have the dialogue option about staring, I have passed that one some time ago.

I was able to keep Morrigan and leliana most of the way...but i married anora and leliana quit.
We just cant have our cake and eat it too.

He offers the earring for the first time after he falls in love (so, after Taliesen and at 91+ Love). But the romance doesn't finish there -- and you can turn down the earring as well. Whether you accept it or not the first time (I never do), afterwards, invite him to your tent and then select the dialog that opens up in the "personal" discussion tree.
Edit: Not choosing Alistair is not what makes him become a drunk nor is it what causes him to sacrifice himself. He can become a drunk with a male warden or a friendzone warden as well, and what causes him to sacrifice himself if the DR isn't done has already happened.
Second edit: Leliana is bugged that way in the vanilla game. Console players are stuck with that, unfortunately. PC players can fix it -- she should stay if she's hardened even if you are getting married to Alistair/Anora. Zevran will definitely stay as long as his approval is high enough as long as there are no other romances going on.

No, I don't mean that at ALL. I am talking about AFTER he offers the earring for the first time. This is a pivotal part of the romance -- inviting him after he falls in love. You get a different dialog if you've been to the tent before than if you haven't, but in order to get his declaration of feelings, you need to invite him after he's in love.
If you're on an unmodded game, btw, after the Taliesen encounter, tell him you want him to stay rather than putting the choice on him. There's a romance breaking bug if the dialog leads to a public kiss -- it will never progress past adore so you'll never get the earring or the declaration of feelings. A couple of mods fix this bug, but console players and people who prefer not to mod are stuck with it.

he will initiate a dialogue after you do his personal quest and reaches a certain level of approval (I think its 90+) hes always at 100 by the time I do his quest so I don't know the numbers for sure.
VERY cute and definitely worth the wait. You get an awesome special kiss that time too.
*Edit* Unless you are a console player and want to romance Alistair I would recommend this mod to improve buggy parts of the romance and adds some really nice perks to it.

I prefer Zevran (though I really like the Alistair romance), thanks to Ejoslin I like the idea of a political marriage with Zevran on the side, so that's what I'm trying now.
If you really want to know how many people prefer Alistair (or Zevran) I suggest checking a few pages of the Ali and Zev thread and just count how many different people are posting there.

You can't have Zevran on the side if you break up with Zevran -- you can if you break up with Alistair or never romance him and marry him in a political match (Teyrna of Highever vs Teyrna of Gwaren I suppose, though one is a gray warden and one is the king's widow, pretty equal politically actually).
People prefer both romances for various reasons -- a lot of people also like both.
They start in different places. Then end up WAY differently than you'd expect. They're both beautifully written and very rewarding. I prefer Zevran's romance because there's something so compelling about someone fighting falling in love but falling so hard that he has no choice but to give in despite it being against everything he was raised to believe. Plus the romance strikes me as a bit more, I don't know, mature I suppose. It's more grounded in reality. Alistair's is more about the magic of first love, but it is very much in the moment as well. Zevran is always looking at the future, even before falling in love, Alistair doesn't face it until he falls in love.
It's worth two playthroughs just to go through both.
