Two as well.
I've been meaning to play it a third time, but they keep coming out with or advertising DLC that looks relatively interesting -- Hammerhead, Kasumi, now Overlord. Since gaming time is limited these days, I end up just putting it off until I can get enough DLC to form a sort of critical mass, at which point the whole thing will explode in a great big ball of Mass Effecty goodness. Or flames. Either/or. Will have to see when that time comes.

ME1 = Once
ME2 = Twice. First time I played ME2 I started a new game without importing my Shepard from ME1 ( I hadn't beaten it yet, I lost interest shortly after recruiting Liara and stopped playing for about a year ). Beating ME2 made me interested in going back to ME1, I loaded up my old save, and ploughed through without stopping to to do Sidequests. It's an intersting contrast between the default storyline for Shepard in ME2 and carrying over my paragon shepard from ME1. I'm glad I had the oppurtunity to see the differnces between the two.

I have four Shepards (two male, two female, a vanguard, a sentinel and two soldiers) and I think I'm sticking with these four characters now, but I've only played through ME1 with two of them, so I'm thinking I'll do at least two more full playthroughs of both games before ME3 comes out because I want all of them to actually have gone through everything. Plus one of the ME2 only characters is a 100% paragon, and that really makes zero sense with the default setup.
