Hey, I've played through Mass Effect 2 two times before this, and both times I was a completionist and mining maniac -- where I'd mine every planet to depletion and had so many resources that by the end of the game I could probably have afforded every upgrade in the game again.
The first time through, I wasn't ready after I'd collected the Reaper IFF and had to do a bunch of loyalty missions, and ended up losing the entire Normandy crew (though all squadmates lived).
Second time through, I did it perfectly.
This current time through, however... I did everything almost perfectly, but it was slightly different. There were a few new DLC and a patch that adjusted mining, so you didn't need to mine as much. This time, I only mined planets as I needed them when I acquired new research opportunities.
I did all 11 Loyalty missions before going to grab the Reaper IFF and then went and did Legion's loyalty mission (picking up two new upgrades, Legion's sniper rifle and Geth Shield Boost #2), now I can't access the Galaxy map without triggering the cutscene where the Collector ship abducts the crew. And I don't have enough platinum to research these two upgrades.
I know neither of these are plot related and wouldn't affect much either way, but I'd still rather have them.
I know that in order to have 0 Normandy Crew casualties, you must pursue the Collector ship immediately, which is why I did all Loyalties before getting the IFF.
While landing on planets and doing missions/assignments count against me, I'm not sure if mining for platinum would also do this.
Anyone know for sure if I can go mining for resources before attacking the Collector Base? As long as I don't land anywhere.

Hmm... I know that if you do 1-3 missions after the crew is grabbed, then half of them will end up dying. If you do 4 missions, they will all die. That's what it said in the Game Informer magazine anyway. Mining for minerals has never counted as a mission, so you can probably get away with mining for the resources without it counting against you on the crew's safety. You could try saving first, trying it, then letting me know if I was completely wrong and everyone's dead.

I'm pretty sure mining doesn't count, best bet is to just do what Pacifen said and make a save game, then do you mining and pursue the ship and see what happens.
I make sure all my loyalty missions/upgrades and mining (I make sure to have enough on hand for any additional upgrades) are done before I hit the IFF mission, so can't say I've encountered this specifically myself.

Mining doesn't affect the deaths of the Normandy crew. Or landing on Illium/Citadel. Only missions will move time forward. Kinda like conversations, really. Conversations with the crew don't go forward until you do missions.
