Jade Empire made me like Bioware.
Mass Effect 1 made me love Bioware.
Special mention to:
Dragon Age: Amazing game. Only bad thing was the obsolete graphics used in it.
Mass Effect 2: Great story. Would be better if it has more than recruit mission then the big ass suicide mission.

Baldur's Gate was also the first one I played.

BG2 was awesome, but the monsters almost stood on each other. It was a little cramped, so to speak.

My first Bioware game was Baldur's Gate, incidentally. It was also my first experience playing anything D&D-related (vs. my first experience of D&D in general, which was the cartoon!).

Baldur's Gate for me
Same here. First Bioware game was Baldur's Gate and that was a fantastic experience and still my favourite (especially with the Easy Tutu mod).

Mass Effect 2 before 1, than Dragon Age. I love this three, but it's easy to say which of them i like most. Neverwinter Nights i stopped playing somewhere in the second act. I just asked myself why i was playing it and found no aswer. I hate the D&D rules and the story was extremly boring.
I really tried to like Baldur's Gate, for all the love i have seen for this game must have some reason. I believe everyone who says it has a great story and remarkable characters, but i just can't stand the gameplay. The first time i tried, a goblin or something one-shoted some party member and i got frustrated. The second time i stopped in Candlekeep because the moving was just to slow. After discovering the newer BioWare games for me i tried again and got to the first city in the south, before i got killed in some sidequest. I just can't get into the D&D rules and i am to easily frustrated, i admit. But i'll give KotOR a try soon.
Sounds like my experience with Baldur's Gate. I foolishly prejudged Baldur's Gate 2 by that experience for a long time, and when I finally got BG2 from a bargain bin, and tried it out, it blew my mind.
BG2 fixes all the things that make BG1 frustrating and tedious, and is better in every single way, including the story, IMHO. After you get out from the initial dungeon from where you start the game, and enter the city, you're immediately drawn in to this wonderful, engaging story, in a world that seems big and open, yet has great content, and proper side adventures everywhere.
So even if you hated BG1, I highly recommend picking up BG2, and giving it a go. You might be as pleasently surpriced as I was.

Jade Empire comes a close second because of its unique setting, gameplay and cultural sensitivity. IRL I'm of East Asian heritage and I must say that Bioware did a great job with storytelling and lore/mythology integration, although some cultural mishmashing was inevitable. I only played that game once, but I have fond memories of that session.

Best RPG ever made. Could never really get into BG, never found the deep and immersive character interactions everyone raved about with the likes of Noober or Minsc and his space hamster. /shrug
