If i start a new game with a savegame from ME1 and put my points into and maxing the Paragon/Renegade 100% bonus skill as quickly as possible.
Will i still have have problems encountering dialog selections that i wont be able to pick?
If so does this mean that you either have to go full Paragon or full Renegade to get enough points for potential dialog decisions?
Is it possible to max both Paragon and Renegade?

It's not possible to max out both bars. However, if you import an ME1 Shepard whose alignment is a maxed out Renegade with about 30-45% Paragon (or the other way around), you will get almost all the persuasive dialog options for both alignments in ME2.
I'm currently replaying ME2 with a female Shepard like that, and I'm nearing the IFF mission, and I have yet to see a single Charm/Intimidate that I can't pick. This was not the case with my full Paragon Shepard, however, where I could only pick Charm options but Intimidate ones.

Even doing so, will i still have to play either renegade or paragon or can i mix freely without worry during my playthrough?
What about if use the paragon/renegade glitch on Noveria in ME1 to max both bars before tranfering the file to ME2?

If you manage to do that and see yourself able to choose every Charm and Intimidate option freely in ME2, you can play whatever alignment you like and max it out, even if it's not your original (maxed out) alignment from ME1.
As for the glitch, never used it, so I don't know. Sorry.

It is possible to have may Paragon/Renegade and half and higher Renegade/Paragon but not really close to maxed out.

As long as you import an ME1 character with high scores in both P and R (say 90/60 or 60/90), you can play a balanced game, mixing freely, and still have almost all persuasion options available. But only if you do the loyalty missions in the correct sequence, and you do them as early as possible. This is how it usually goes for me after Horizon:
(1) After Horizon, usually Jacob's loyalty mission is open.
(2) Recruit Samara - Miranda's loyalty mission opens
(3) Recruit Thane - Mordin's loyalty mission opens
(4) Recruit Tali - Garrus' loyalty missions opens
(5) Do Miranda's loyalty mission - Jack's loyalty mission opens.
(6) Do Jack's loyalty mission - Grunt's loyalty mission opens.
(7) Collector Ship mission triggers. Playing it opens Samara's loyalty mission
(8) Do Samara's loyalty mission - Thane's loyalty mission opens
(9) Do Thane's loyalty mission - Tali's loyalty mission opens.
(10) Do Tali's loyalty mission.
Provided you (a) do every sidequest that gives you P/R points as early as possible on Illium, Omega and the Citadel, (
talk to all squadmates as much as possible, exhausting all possibilities for getting P/R points, © avoid setting your foot on Tuchanka at all until later, and (d) specialize your class skill with the 100% P/R bonus, you should be able to get what you want in all conversations with persuasion options up to this point. If you have played a balanced Shepard until now, you must stick more to one path to get the last two persuasion options enabled: in Zaeed's loyalty mission and the Tali/Legion conflict.

I in fact did this glitch and I never saw even in one instance where I couldn't choose any option I wanted. If you do the Noveria glitch in ME1, you are almost certain to do any choice throughout ME2. However, in my renagade oriented file where nearly every action was renagade, when it transfered, it said the file was Paragon even when both bars were full in the first game. I think that was a fail on my part because I used the glitch too much for the paragon bar and that went up farther than the renagade. Ignoring that, every option in ME2 was available to me so if you did the glitch, they should be for you to.

I am glad there is that "bug" on Noveria. I do not really think, the developers did it randomly. The renegade options are often so strange and in the normal conversation or side quests it is bigger problem to get points. Specially when I have double neutral background and profile. Also some some renegade approach is totally crap, specially insulting my mates. I hope the situation will be better in ME2, which I finished just like pure paragon. Now I wanted to try different class and renegade through the ME1 for import in ME2, so I hope it is going to be better.
Not liking much Vanguard in ME1 because it feels like adept with shotgun (which I have in ME2 but that is a different topic.
