Thanks to Chimervera and Sable Rhapsody for answering my question about the "compassionate Renegade" quote.
I voted in the poll that Garrus and Tali should both be squadmates in ME3 (if the player keeps them alive of course, and it would be cool if they were alive for default Shepard too). If Garrus wasn't in ME3, I'd still buy it. I mean, it's the last of the trilogy and now that I've played BioWare games, no other games can compare. And I'm so used to my favorite characters getting killed off by now - I don't like it, but I honestly can't say I'm surprised anymore. I have to watch my favorite (Saren) die with every ME1 playthrough, and if it's the same with any other favorites (TIM, Kai Leng, or less likely - Garrus) then I'll just play through the sad scene like Saren's suicide, not wanting to watch it but enjoying watching the character up until that point. The one thing that would really annoy me would be if Shepard has to die no matter what. I would stop playing before the end game every time. I didn't spend countless months getting these Shepards through the game just to kill them off.
About Garrus, Sidonis, and revenge: choosing revenge, doesn't always leave a character with bad feelings about it. That sort of thing depends on the character. Some can feel bad about it, while others can feel happy, satisfied, and at peace. The fact that both choices get Garrus' loyalty and help him focus for the suicide mission means that he can feel good about both choices - he'll trust, respect, and possibly even love Shepard just the same no matter what happened with Sidonis. The way I see it is this - if Shepard chooses the Renegade path with Saleon, Garrus is happy, satisfied, and at peace. He even says it felt good. If Shepard chooses the Renegade path with Sidonis, Garrus is satisfied with the decision (after all, it was his decision) and more at peace than he was before. It's not possible for him to be happy or completely at peace with his team still dead, no matter what path Shepard takes in his loyalty mission. On some level, he still blames himself. But he does feel better now that it's been taken care of.
About the differences of human and turian "courting rituals": I think this one also depends on the character. For example, some Shepards like the Flux music and some don't. Some people might not like the compliments he used, my Shepard thought they were sweet and a sign that he was really trying. Some like the wine and others might not, but they could still think it's a nice gesture even if they don't drink. Some care about his fashion choices, others don't care or are too busy staring at his fringe to notice, etc.
Also, something random that I noticed when I was playing through Tali's loyalty mission again yesterday. The male quarians have some sort of metal coming out of the back of their hoods that reminds me of Saren's fringe. xD I first noticed it with the hologram of Tali's father, and since then, every side-view of a male quarian reminds me of Saren.
