Welcome to video games, another conveyor belt of entertainment.
Lol. No, let me explain.
Example: human noble origin story - by the end I have to become a Grey Warden no matter what.
But I am very clearly placed in a situation where I am shown that this is the only way out. Not only that, I am able to object. To even say, flat out, "NO."
It happens anyway, but it
feels more believable to me and makes me feel like my character is my own. (The other examples you provided are avoidable - for instance they've never happened to me. The instances in ME2 I mention are unavoidable. And I haven't finished the game, crap, I liked Riordan...)
Now compare this to Shepard's first discussion with TIM. I do not feel as though I am placed in a situation where joining TIM is the only way out or the only thing I can do. And indeed when Shepard says, "If this is true I would consider helping you" I want to go, "Wtf?!" I feel like that decision is being made for me.
