I think that he's most likely a Sentinel with shotgun and assault rifle training.

Saren uses both tech grenades and biotics in the first game so if he were to have a 'class' it would be sentinel.

Maybe Saren acquired biotic powers only after being upgraded by reaper tech? The book made him out to be a tech soldier like Garrus. No mention of biotics.
