I'm Playing a Sentinel with Sniper Rifles and wanted to know which weapon mods should I put into Assault Rifles and Shotguns ?

I'm a little confused by your question, but I'll try.

If you're a Sentinel with Sniper Rifles, you should not bother using your unskilled Assault Rifles or Shotguns ever. So "weapon mods" for these two should be non-existent, and used instead in your Pistols/Sniper Rifles or being sold.

I'd agree about the AR, but there are situations where the shotgun is still a solid choice untrained. (I'm thinking Feros) Load it with a couple of frictionless and sledgehammer rounds for the extra crowd control.

Sorry, let me rephrase, What weapon Mods could I put in Shotguns and Assault Rifles so that they can be better. because they can still be useful even if your not trained in them. and thanks GreyRanger, I will try that out.

The thing about the AR, game play wise, it covers the exact same function as the pistol for which your sentinel has training through his class skill. Assault rifle also suffers a great deal if you can't use the zoom in function.

That said, default good mods are things like frictionless, rail extensions, scram rails, though you could try combat optics and kinetic coils.  The first willl improve accuracy, and the second will help deal with recoil recovery.  As for ammo my general answer is keep some of the level VII Tungsten and Shredder.  Though there are situations I find the cryo useful.
